1 1/2 cupsall-purpose flour
1 1/2 tsp~baking powder
1/2 tsp~salt
1 tspground cardamom
3large eggs
1 cupgranulated sugar
3/4 cupextra-virgin olive oil
1/2 cupwhole milk
2 tbsporange zest
1/4 cupfresh orange juice
1 tsp~vanilla extract
Method
- Preheat oven to 350°F and grease a 9-inch round cake pan, then line the bottom with parchment.
- Whisk together flour, baking powder, salt, and cardamom in a medium bowl.
- Beat eggs and sugar in a large bowl with an electric mixer until thick and pale, about 3 minutes.
- With mixer on low, drizzle in olive oil slowly until incorporated.
- Mix in milk, orange zest, orange juice, and vanilla.
- Fold in dry ingredients just until no streaks remain.
- Pour batter into prepared pan and bake for 40-45 minutes until a toothpick comes out clean.
- Cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
