Whipped Feta Dip with Chilli Oil and Pistachios

Creamy feta blended with yoghurt until fluffy, topped with crispy chilli oil.

Ingredients

Dip

200 gfeta cheese
150 gGreek yoghurt
2 tbspolive oil
1 clovegarlic
zest of ½lemon

Chilli Oil

4 tbspolive oil
2 tspchilli flakes
1 tspsmoked paprika

Topping

30 gpistachios(roughly chopped)
1 handfulfresh dill(chopped)
warm pitta breadto serve

Method

  1. Add feta, yoghurt, olive oil, garlic and lemon zest to a food processor.
  2. Blend for 2-3 minutes, scraping down the sides, until completely smooth and fluffy.
  3. Spread the whipped feta onto a serving plate, creating a shallow well in the centre.
  4. Heat the olive oil in a small pan over medium heat. Add chilli flakes and paprika, cook for 30 seconds until fragrant.
  5. Spoon the chilli oil over the feta.
  6. Scatter with chopped pistachios and dill.
  7. Serve with warm pitta bread for scooping.
