Classic Tomato Sauce

Classic Tomato Sauce for pasta and other tomato based dishes.

Brown Onion
4 clove
Garlic

Bay Leaves
1 tsp
Fish Sauce
1 tbsp
Rosemary
1 1/2 tsp
sugar
Salt and pepper to taste

Tikanga

  1. Quarter the Tomato's, finely chop Onion and Garlic
  2. In a large pot heat some oil and fry the Onion and Garlic until Onion is clear
  3. Add the quartered tomato in batches, and use a potato masher to squish, after every batch let the mix come to a boil
  4. Add bay leaves, rosemary and fish sauce
  5. Let simmer for 4hours stir regularly
  6. Once cooked and mixture is looking broken down and saucy, use a stick blender or standing blender to blend the mixture
  7. Using a fine sieve and silicon spatula push mixture through into another pot
  8. Add sugar, and stir well, boil down to desired consistency
  9. Sterilize enough jars and lids for the mix, sterilize the utensils and tools for filling
  10. Fill one jar at a time
